Victoria realized that there was a secret sommeliers knew but not most wine drinkers—what shapes a wine’s structure and aromas more so than any other factor is the climate, not the grape. A wine's structure: acidity, alcohol levels, body (richness), and sweetness as well as its development of esters (the “fruitiness quality” in aromas), are developed by temperature and sunshine levels.
Although we could get super geeky and make a specific glass for every single region in the world, Victoria simplified it for the consumer into warm and cool region offerings.
