Ingredients:
¼ cup extra virgin olive oil
Lemon juice (1 whole lemon)
3 avocados (cubed)
1 pt. cherry tomatoes (halved)
2 cucumbers, chopped
⅓ cup corn (optional)
1 jalapeño (optional)
2 tbsp. chopped cilantro
Directions:
- In a small bowl, whisk the oil and lemon juice together.
- Season with salt and pepper (to taste).
- In a large bowl, combine the remaining ingredients.
- Then, toss the ingredients gently with the dressing.
- Serve and enjoy!
