Sweet Potato Hand Pie Recipe

Imagine this: It’s the day after Thanksgiving, your fridge is stocked with leftovers and you already ate so much the night before that you can’t even think about loading up your plate again. We have a solution for you! This hand pie recipe from Chandni Patel of Chand’s Kitchen is the perfect way to spruce up leftover sweet potato casserole and cranberry sauce—or you can make them on Thanksgiving to impress your friends and family with a unique treat.

If you are using leftover sweet potato casserole, however, these pastries take less than 30 minutes to put together and bake! You just have to place some sweet potato mixture between the two puff pastry sheets. Then, make use of a fork to seal the edges. Bake it until it becomes a golden brown color. While the hand pies are baking, mix up the cranberry cream cheese icing to drizzle on top. This recipe is perfect for Thanksgiving dinner or a revamp on your leftovers. Plus, you can enjoy them for breakfast, brunch, snack time, or even dessert!

Ingredients:

For The Hand Pies:
1½ cup sweet potato casserole
2 puff pastry sheets

For The Icing:
½ cup cranberry sauce
½ cup cream cheese (room temperature)
¼ cup powdered sugar

Directions:

For The Hand Pies:

  •  Preheat oven to 400° F.
  • Cut the pastry sheets into three rectangles each.
  • Scoop about a quarter cup of sweet potato casserole and place it onto one end of the rectangle.
  • Fold the other side of the dough on top of the mixture, and use a fork to seal the edges together.
  • Bake for about 14-18 minutes, or until golden brown.

For The Icing:

  • Whisk the cranberry sauce, softened cream cheese, and powdered sugar with a hand mixer or by hand.
  • Lightly drizzle some of the icing on top of the pies.
  • Enjoy!
